Veal al Limone

Ingredients

  • 2 tablespoons butter
  • 8-10 thin slices veal escalopes
  • 1 tablespoon olive oil
  • Flour – just enough to coat the veal
  • Juice of 2 lemons
  • ¼ cup chicken stock
  • 2 tablespoons flat leaf parsley, chopped
  • Salt and ground black pepper to taste

Directions

  1. Lightly coat the veal in flour just before frying and shake off excess flour
  2. Cook veal, in batches, for 1 to 2 minutes each side or until golden
  3. Remove veal from the pan and set aside in a warm place
  4. Add the lemon juice, chicken stock and parsley to the pan and cook for another 3 to 4 minutes until slightly thickened
  5. Season to taste
  6. Serve with tagliatelle, mash or baby potatoes
  7. For sides, this meal goes really well with some lightly grilled asparagus, green beans or a green salad
