Tangy potato salad
Now that you have beautifully boiled those eggs, how about a great potato salad that you will make time and time again? It is that good.

Ingredients
500
g
baby potatoes
unpeeled
2
hard-boiled eggs
½
cup
mayonnaise
1
tbsp
cider vinegar
1
gherkin
finely chopped
3
spring onions finely sliced
salt and pepper to taste

Instructions
Cook potatoes in a large saucepan of boiling, salted water for 15 minutes or until tender.
Drain. Cool. Peel and cut to preferred size.
Transfer warm potatoes to a large bowl.
Combine mayonnaise and vinegar in a bowl. Add to potato mixture.
Season with salt and pepper. Toss to combine.
Add gherkins and spring onions and combine with potato mix
Serve topped with quartered hard-boiled eggs
Notes
You could also fry some bacon rashers to crumble through the potato salad and to sprinkle on top.
